Instant Pot Popcorn!!

Do you ever crave popcorn, but cringe when you think of the price of pre made popcorn? Or Even WORSE, making microwave popcorn? o.O

Well, if you have an Instant Pot and you LOVE Popcorn like I do, then this recipe will Rock your Socks off!!! 🙂

I can still remember when my parents got their first microwave in the 70’s and just how amazing it was! And THEN Microwave popcorn hit the shelfs around 1981!!! OMG! Am I dating myself or WhAt???? 😉

Little did we know in the early 80’s that the convenience of popping popcorn in the microwave and jumping for joy when it was finished, would be so bad for our health!!!

You see the Bag that keeps all of that yellow whatchamacallit stuff and kernels of popcorn is lined with perfluorooctanoic acid (PFOA). Can you even say that? I know I can’t!! Which takes you back to what I always say about ingredients, “If you cannot pronounce it, you should not be putting it in or on your body!” Also, this chemical is the same toxic stuff that is found in teflon pots and pans that are super bad for us also!!!

Now lets talk what is inside the toxic bags! Things like Trans Fat, Proply Gallate, TBHQ which is short for Tertiary Butylhydroquinone. Trans fats are considered one of the worst fats we can consume and may not even be on the label if their content is less than 0.5 grams, so it is labeled as “Trans Fat Free”. However, even if 1 serving is less than 0.5 grams, what does the entire bag have in it????? Proply Gallate is a preservative that is used in food, cosmetics, and pharmaceuticals and it is linked to all sorts of things like breathing problems, skin rashes, and stomach issues. And TBHQ is a chemical that is made from BUTANE gas!! If the chemical name on a label is abbreviated, you have to stop and think about just how bad that really is for you and TBHQ is very bad!! TBHQ is linked to ADHD, allergies, asthma, dermatitis and dermatitis!!! And to top off the list of unsafe things inside the toxic bag, the manufactures add artificial color and flavors to hide all of the chemicals!!!

Um! No Thanks!!! And this my friends, is WHY I make my own Popcorn at home in our Instant Pot in about the same time as it takes to make a bag of toxiccorn! AND! You can make numerous batches of yummy popcorn at home for about the same price as 1 bag of pre popped popcorn! Now that is a Win- Win in my book!!

Ingredients

 

1/2 Cup popcorn kernels – organic is best

2 Tbsp coconut oil – organic virgin is best  (MCT oil can be used in place if you are worried about a coconut taste, however, a good quality coconut oil will not give a coconut taste.) 

Himalayan salt to taste

Optional

2 Tbsp butter – Kerry Gold is what we like

 

Directions

Turn Instant Pot on to the Saute (High) setting. Allow 5 minutes for  the temperature to get high.

 

Add coconut oil and let it completely melt. Turn the Instant Pot and swirl around the coconut oil to completely cover the bottom of the pan. Make sure the oil is sizzling hot before adding the popcorn kernels (put a drop a water to check that it sizzles). NOTE: If you skip this step, the popcorn will stick to the bottom and burn.

 

Add popcorn kernels and use a wood spoon to coat the popcorn well. Stir for about 30 seconds. Cover with a clear Instant Pot lid with vent hole to allow air and steam to escape.

 

It will take about 2 minutes for the popcorn to start popping. Do NOT take off the lid. Use the lid to see when most of the popcorn is popped and listen for the popping to decrease (about 3-4 minutes), and then turn it off (letting the rest of the kernels pop for another 30 seconds or so). Be careful to not let it burn.

 

Using a potholder, remove the lid and then take out the inner pot. Pour the popcorn into a large bowl and let it sit for about 2-3 minutes to let the coconut oil set in. This adds to the flavor.

 

Add butter (optional) and salt to taste.

Recipe Notes

Coconut oil will make the best popcorn because it’s a high heat oil. It also adds a lot of flavor.

If you find that your popcorn kernels aren’t popping, it could be the age or quality of the kernels. Try a different brand or batch of popcorn.
